OIL INCANVAS
A Kalamata Sour. From Vienna to New York City
Oil in Canvas – Greek olive oil, Viennese glass art, and international bar culture, united in a signature cocktail. Our premium olive oil meets the crystal glass artistry of Lobmeyr and the bartending mastery of legend Albert Trummer. Born in the Viennese American Bar Tür 7, it becomes Oil in Canvas: a signature cocktail full of character, subtitled "A Kalamata Sour". A drink that redefines bar culture – from Greece to Vienna to New York, crafted for special moments.
WHY THE
OIL IN CANVAS?
OIL IN CANVAS?
A product that is truly lived also needs its canvas. That is why we took our olive oil out of the kitchen and placed it at the bar. With Oil on Canvas, it sits visibly on top – oil on foam, color on canvas. Together with Albert and Jakob Trummer, we prove that premium olive oil is not just an accompaniment here, but a signature ingredient.

Atelier by Albert Trummer
If anyone understands that an ingredient needs a stage, it's Albert Trummer. The Austrian went to New York in the late nineties and, with the bar Apotheke in Chinatown, created a place where drinks are crafted like prescriptions – from herbs, tinctures, and a lot of patience. He coined the term "Bar Chef" for himself because "mixologist" didn't sound enough like the kitchen. Together with his son, Jakob Trummer, he developed the Oil in Canvas with us: a Kalamata Sour in which our olive oil is not shaken in, but sits visibly on top.
American Bar Tür 7, Vienna
The Oil in Canvas was created during a guest shift by Albert and Jakob Trummer at the American Bar Tür 7 in Vienna. Gerhard Tsai, owner of Tür 7, made the evening possible – as a host, as a sparring partner, and as someone who not only allows but encourages extraordinary ideas. His bar is one of the most exciting cocktail bars in Europe, combining classic bar culture with creative ideas. The perfect place for the birth of the Oil in Canvas!
