How to recognize quality
✅ Smell: fresh, green, grassy, possibly slightly peppery
❌ never rancid or neutral
✅ Taste: lively, fruity, with a subtle bitter note
❌ not flat, not soapy
✅ Color: from golden yellow to deep green – color doesn't say everything, but a dull, matte tone can be a warning sign
Origin is not a footnote
Ask about the origin.
- Where do the olives come from?
- Was it cold pressed?
- Who is behind the oil?
