There's a practice in olive harvesting that hardly anyone knows about: Many small olive farmers bring their harvest to a central mill or press. It sounds sensible at first – but then something begins that we view critically:
Several harvests end up in the same tank.
What is bottled in the end is often a hodgepodge.
In the end you get oil – but no one can say which olives are really in it .
