What many people don’t know: How does the pressing process actually work? There's a practice in olive harvesting that hardly anyone knows about: Many small olive farmers bring their harvest to a central mill or press. It sounds sensible at first – but then something begins that we view critically: Several harvests end up in the same tank. What is bottled in the end is often a hodgepodge.
